The German Nutrition Society (DGE) recommends eating at least five portions of fruits and vegetables a day. To meet this requirement, consumers are increasingly opting for smoothies from supermarkets. These drinks are made of fruit and vegetables, which are obtained from whole fruits (usually without peel and core). Conveniently carried in a bottle, they are a popular snack on the go.
Shortcomings in sensory analysis, chemical quality and declaration
In a recent test, a total of 25 smoothies were examined. Thereby large differences were determined in particular regarding the sensor testing as well as the chemical quality and the declaration of the ingredients. In total, 18 of the tested fruit drinks were not convincing: they were too watery, intransparent in regard to declaration of the respective fruit and vegetable contents, or had a cooking requirement. During pasteurization of the raw materials, an unpleasant cooking requirement can be developed that negatively affects the inherent taste of the smoothie. Heavy metals (lead and cadmium) or pesticide residues, on the other hand, were mostly found in harmless quantities.
It depends on the correct declaration
In Germany, food labelling regulations regarding the listing of the main ingredients on the front label do not exist yet for smoothies. Nevertheless, taste and ingredients declared on the front of the packaging (e.g. bottle) should match, that’s what consumers desire. Likewise, a creamy but easy-to-drink consistency is important for the perfect mouthfeel.
